Fog can easily trick the camera's meter. Due to the high reflectivity of the dense, low-lying cloud, automatic metering usually creates an underexposed image. Dial in some exposure compensation with +1 f-stop, or try shooting to the right-end of your histogram.

Exposure bracketing is a simple technique that'll ensure your images will be properly exposed in challenging lighting situations, with detail retained in both the deepest blacks and brightest highlights. It involves taking two more images of the same scene: one slightly under-exposed (i.e. -1/3EV), and the second one slightly over-exposed (i.e. +1/3EV).
